Aura at the Westin St. Maarten Greets High Season with a New Concept, Executive Chef and Menu
High season on St. Maarten’s famed Dawn Beach will bring more than just the sight of winter-weary travelers seeking refuge in the warm rays of the Caribbean sun. It will also bring new additions to the “Culinary Capital” of the Caribbean as it welcomes its newest landmark –Aura steakhouse at the Westin St. Maarten Dawn Beach Resort and Spa- manned by the resort’s new Executive Chef John Bakker. The resort and restaurant were recently awarded AAA’s highly acclaimed Four-Diamond rating.
Located on the Dutch side of the island, Aura formerly exemplified the best and most sophisticated aspects of the various culinary traditions that make up Caribbean cuisine. Now reinvented, it will deliver classic steakhouse fare with appetizers and specialties that continue to lend a sense of place to this new gastronomic outpost.
Menu highlights include: Yucatan style, Achiote-marinated Grilled Pork Chop with Cumin Flavored Oaxaca Mole; Coffee-rubbed, Blue Mountain Crusted Sirloin Steak, served with Honey Roasted Garlic Jam and Pan Juices; or Cast Iron Pan-Blackened Rib Eye served with Roasted Almond and Smoked Paprika Sauce with Adobo Chipotle and Roasted Red Pepper. All beef is dry-aged certified Angus beef that is renowned for its great flavor and tenderness.
