UNICO 20°87° Hotel Riviera Maya Welcomes Chef Gerardo Vázquez Lugo

The luxurious all-inclusive UNICO 20°87° Hotel Riviera Maya has announced the appointment of award-winning Chef Gerardo Vázquez Lugo as the latest celebrity chef-in-residence at its flagship restaurant, Cueva Siete. Known for showcasing the culinary diversity of the Yucatan peninsula, Cueva Siete will experience a revitalized menu under Chef Gerardo’s expert guidance, blending traditional flavors with innovative techniques.
The Chef-in-Residence program at UNICO 20°87° invites renowned chefs to take creative control of Cueva Siete for two years, ensuring a dynamic and ever-evolving culinary experience for guests. Chef Gerardo follows in the footsteps of celebrated chefs like Lula Martin Del Campo, Xavier Perez Stone, and Christian Bravo, who have elevated the program's reputation.

With over 25 years of culinary expertise, Chef Gerardo is celebrated for his dedication to fresh, locally sourced ingredients and sustainable practices. Currently the Executive Chef at Nicos in Mexico City—recognized among Latin America’s 50 Best Restaurants for a decade—he is also a Diners Club Lifetime Achievement Award recipient.
Chef Gerardo has honed his craft in prestigious kitchens worldwide, including Le Bristol in Paris and the Imperial Hotel in Tokyo. He also serves as a mentor to aspiring chefs through the Young Chefs S.Pellegrino program and gained recognition as a judge on Netflix's Iron Chef Mexico.
